Local entrepreneur brings Lucky Goat Coffee Co.’s first Texas franchise to Frisco

When Little Elm resident Sabrina Watkins opened a Lucky Goat Coffee Co. franchise in Frisco in 2025, it was the first Texas location of the Florida-based café.

“I've always been interested in entrepreneurship and liked the idea of having a brick-and-mortar space. I’ve been a coffee shop person for quite some time,” Watkins said. “I was about to turn 50 and said, ‘If not now, then when?’ I knew I wanted it to be in Frisco because this was home.” 

On the menu: Lucky Goat Coffee Co., which started out as a roastery in 2010, provides the local cafe with proprietary coffee beans, barista training, drink recipes and more. Coffee beans are sourced from Ethiopia, Costa Rica and Columbia. Watkins said lattes are their most popular drink with the brown sugar caramel latte being the top seller. Another crowd pleaser is their seasonal matcha lemonades.

Cow Tipping Creamery to close after decade at The Star

Founding restaurant at The Star, Cow Tipping Creamery announced on a Facebook post that they will be officially closing in July.

The details: Cow Tipping Creamery opened at The Star in 2017 as one of the original restaurants. The reason for closing is unknown.

Upcoming projects

1. US 75 Green Ribbon project

Project: The work will add enhancements to landscaping, erosion control, irrigation and new decorative rock to key intersections along the US 75 corridor in Allen, including Stacy Road, McDermott Drive and Bethany Drive.

Update: Texas Department of Transportation officials authorized advertising the construction project in early June. Officials expect to award the construction project by October.

  • Timeline: November 2026–March 2027
  • Cost: $1.3 million
  • Funding sources: TxDOT, city of Allen

Ongoing projects

2. Coit Road phase 1 widening

Project: Coit Road will be widened from a four-lane roadway to a six-lane concrete roadway from First Street to Prosper Trail. The project includes the roadway, curbs, underground work and drainage.

Update: Construction is roughly two-thirds complete. Paving was scheduled to begin in early June but has been delayed due to heavy rain.

5 orthopedic practices to merge this fall in Dallas-Fort Worth area

All-Star Orthopaedics, AOA Orthopedic Specialists, North Texas Orthopedics & Spine Center, Orthopedic Associates and OrthoTexas Orthopedic & Sports Medicine announced plans to unite and operate collectively as OrthoTexas beginning in November.

The transition will create an integrated orthopedic and spine organization spanning more than 70 physicians and 22 locations across the Dallas-Fort Worth region, according to a news release.

Quote of note: “Coming together as one group allows us to create a more seamless experience for patients and preserves the culture and clinical autonomy that made each practice successful,” said Dr. Michael Briseño, chairman of OrthoTexas and provider at North Texas Orthopedics & Spine Center. “By bringing multiple practices into a single organization, we can make orthopedic and spine care more connected, more accessible and easier to navigate.”

The details: All-Star Orthopaedics opened in 1997 and partners with Carroll ISD and the Alliance Rugby club, according to its website. The business has locations in Fort Worth, Southlake, Flower Mound and Irving.
