San Antonio looks to create tailor-made model for data center growth

On March 4, the San Antonio City Council received a briefing from both CPS Energy and the San Antonio Water System, or SAWS, on the potential growth and impact of data centers on the city.

During the meeting, Mayor Gina Ortiz Jones and council members expressed optimism that San Antonio will become a leader in responsible data center growth.

“We have the opportunity right now to lead in Texas to create a playbook where the rest of South Texas … could look at that and be like, look at what San Antonio is doing, what the team in San Antonio has done,” District 3 council member Phyllis Viagran said.

Current situation: During the briefing, council members emphasized they are not anti-data center, but they are anti-unplanned, unbuffered growth. Multiple members said any future data center growth must be filtered through the need to create a comprehensive model tailored to local water resources—such as the Edwards Aquifer and SAWS’ recycled water system— grid structure, land use and neighborhood concerns.

San Antonio Airport begins Terminal C curbside renovation

The San Antonio International Airport will begin construction on Phase I of a multiphase terminal curbside and roadway development March 23.

The details: Part of the Terminal Development Project, Phase I will include a zero-curb transition that will connect the roadway to the future Terminal C, allowing for easier accessibility and loading. Phase I will also include construction on the Terminal C canopy.

Jesus Sanez, director of airports for the city of San Antonio, said the zero-curb transition will allow passengers a smoother transition and will provide easier access to disabled travelers.

What else? During construction, passengers and drivers are advised to arrive early and use alternatives to curbside pickup and drop-off.

Boerne-based brunch spot Sunny’s to expand into San Antonio this spring

A Boerne-based brunch spot is expanding southward into San Antonio soon.

In case you missed it: Sunny’s All Day Brunch & Bar is planning to open a second location near The Rim in San Antonio sometime this year, according to an Instagram post from the business.

It will be located at 17623 La Cantera Parkway, Ste. 107, in Northwest San Antonio, while the current Sunny’s location is at 518 River Road, near downtown Boerne.

The context: Sunny’s All Day Brunch & Bar first opened in Boerne in 2025, according to previous reporting from Community Impact.

The eatery serves up a selection of breakfast, brunch and lunch options all day, plus a variety of cocktails and beverages.

“You can come get dinner at breakfast and get breakfast at dinner,” General Manager Josh Suarez said.

Customers can get steak & eggs for dinner and build their own bowl with rice, beans, sauces and a range of meat options, according to the menu.

West Coast chicken chain to expand to San Antonio

Officials with Starbird, a San Francisco-area-born restaurant chain, announced plans to expand with new locations in San Antonio and across Texas after signing a 36-unit franchise agreement with the Houston-based Mac Haik Restaurant Group. While no specific locations have been identified, company officials said nothing will open until at least 2027 in San Antonio.

Starbird serves a variety of chicken-based entrees and sandwiches, from fried chicken strips to gourmet sandwiches and more, according to the menu. The restaurant also serves specialty salads and desserts.

Double-decker tea and touring experience opens in San Antonio

Tea Around Town—a double-decker tea tasting and tour bus experience—announced the arrival of a permanent location in San Antonio on March 10.

Attendees receive a 90-minute scenic tour of San Antonio while also participating in a traditional tea room experience. The tour begins at 849 E. Commerce St. in downtown San Antonio.

Patrons get to drink and eat a curated selection of tea and baked goods while receiving live entertainment and a guided narration on the tour.

Data: See where the most Texas students are applying for education savings accounts

More than 229,000 students have applied to receive state funds for private education or homeschooling under Texas’ education savings account program, according to the state comptroller’s office.

By the numbers: State data indicates that the most applications have been submitted on behalf of students living in urban areas and the surrounding suburban communities. As of March 8, students living in Houston ISD’s boundaries led the pack with over 8,900 applications, followed by 6,700 applicants in Dallas ISD.

The data reflects how many students living in each district's boundaries have applied, including those not currently enrolled in a public school.

The background: State lawmakers created the Texas Education Freedom Accounts program in 2025.

Students accepted for the 2026-27 school year will receive $10,474 for private education or up to $2,000 for homeschool. Students with disabilities can receive up to $30,000 each.

More details: Of the first 152,000 program applicants, nearly three-quarters were not enrolled in a public school during the 2025-26 school year, data obtained by the Texas Center for Voucher Transparency shows.
