Di Mantzio’s brings Greek, Italian culture to Celina

At Di Mantzio’s Greek & Italian Gourmet Market, authenticity is king.

In a nutshell: Vasilios Mantzios opened in downtown Celina in 2024 to sell staples like pasta, wine, bread and olive oil imported from small-scale producers that he knows personally, and he doesn’t tolerate producers that he believes have sold out to big business, he said.

How it works: Mantzios said as a small store, he is able to source his items from family-owned operations in Italy and Greece that don’t have the production capacity to sell to large chains, creating a unique taste of the Mediterranean in the heart of Celina.

Looking ahead: He hopes to find a new space that can accommodate both a restaurant and market by the end of the year, he said.

Hometown Paws eyes August opening for Celina pet resort

Hometown Paws will open for dog daycare and boarding in August, a company representative confirmed.

What they offer: The facility will offer daycare from 6:30 a.m. to 7 p.m. on weekdays and overnight boarding every day of the week, according to the business’s website.

Also of note: Clients can also book a “spaw” day for pets staying at the facility, an add-on service that includes a shampoo, rinse and blow dry.

Hattie B’s Hot Chicken offers five spice-levels, from its mild to its “Shut the Cluck Up!” Visitors seeking nonspicy options can also choose from the restaurant’s classic Southern fried chicken and sweet and smoky dry rub options.

Some of its more popular options include the classic chicken sandwich with custom sauce and pickles, dirty bird fries that are loaded with pimento mac and cheese and desserts like banana pudding, peach cobbler and a waffle sundae.

Yang's Smokehouse now open in Plano

The smokehouse’s menu has a variety of meat skewers like sliced beef, pork belly, lamb and chicken wings. Other menu items include grilled vegetables, fried rice, stir-fry, noodles and ribs.

Its “Adventurous Eats” section also offers spicy roasted pig brain.

Texas lawmakers consider data center water use and resource impacts

State lawmakers are considering water use impacts tied to the spread of new data center developments across Texas, and recently heard input from industry representatives and residents as they plan for next year's legislative session.

The initial review may preview proposed state laws regarding data centers and their local impacts. Ahead of the hearing, Gov. Greg Abbott also stated his "bottom line" expectations for data centers going forward: providing their own power, reusing water and reducing electricity costs for their neighbors.

Testimony from regulators revealed that Texas lacks accurate information about the water use of most data centers now operating statewide, despite mandates to submit those details. Representatives suggested data centers' self-reporting on utility use could be one topic to address next year. Many impacted residents and elected officials also raised concerns with public notice and local regulatory authority in relation to the high-profile developments.
