Locally owned Dos Gatos Kolache Bakery debuts in New Braunfels

Wanting to spread Czech cuisine with Texas flair in Central Texas, Dos Gatos Kolache Bakery Co-Owner Chase Katz said he had been eyeing expansion for the past couple of years.

Now, the San Marcos-based kolache bakery has opened its third overall location at 1164 FM 306 in New Braunfels.

“This will be your favorite local coffee shop,” Katz said. “There’s so much to love about being here in New Braunfels.”

Staying local: Dos Gatos opened its first location in San Marcos in 2009. Katz said the concept aimed to fill a specific niche in the region. So Katz partnered up with his brother, Seth, to open a new business. After taking over a recently closed kolache bakery in town, Katz said the idea of a coffee shop with a unique twist was born.

The New Braunfels location has kept the same menu as its sister locations in San Marcos—but it has an entirely different layout. Aiming for fast service and quality product, Katz said the new spot features a drive-thru and walk-up window.

Comal County considers jail expansion for anticipated growth

Another expansion to the Comal County Jail may be on the horizon.

The overview: Comal County commissioners received an update from HDR, Inc., the firm tasked with gathering data on the potential expansion, on an ongoing feasibility study for the jail Nov. 20.

Commissioners showed support for “vertical” construction options designed to meet long-term growth, and an estimated upward trend in inmate capacity needs, according to a presentation from the firm.

The Comal County Jail, which completed its last expansion in 2020, has 582 beds and is operating at 88% capacity, according to the presentation.

The firm’s feasibility study shows the county growing at 23% annually, with an incarceration rate of 2.3% per 1,000 residents—slightly higher than the state average. Based on population trends, the county could require 810 beds by 2035 and 1,101 beds by 2045, according to the firm’s feasibility study.

The Light Park returns to Selma for the holiday season

A holiday light show in Selma has returned for its 2025 season.

What’s happening? The Light Park, a drive-thru holiday light show, is now open to Selma, Northeast San Antonio and the surrounding area through Jan. 4.

Held at Retama Park, the show contains millions of lights, live music and festive food and drinks. The park is also pet-friendly, according to The Light Park website. The event is cashless.

The show is held in nine locations throughout Texas, including Retama Park and Nelson W. Wolff Municipal Stadium at 5757 Hwy. 90—where San Antonio's Minor League Baseball team plays.

The March 3, 2026, primary election is taking shape in Guadalupe County.

What’s on the ballot: As of the Dec. 8 filing deadline for the March 3 primary, candidates are on the ballot for the following positions:

  • Guadalupe County judge
  • Precinct commissioners
  • County Court at Law judge

According to the Texas Secretary of State website, no Democratic, Independent or Green Party candidates filed for primaries.

Dates to know: The first day for voters to submit an application for a ballot by mail for the March 3 election is Jan. 1, according to the Texas Secretary of State website. The last day for voter registration is Feb. 2, with early voting beginning Feb. 17.
