Local couple team up to serve loaded spuds and more at TaterQue in Pflugerville

The History: Bobby Mack is a former union worker who spent lunch breaks wishing he could get a baked potato without driving 20 miles into Elgin. In 2016, after a coworker prompted him to address the problem, he came home to his wife, Bobbie Mack, and wrote down the early concept of TaterQue. 

The couple waited for the right time to explore the entrepreneurial opportunity and opened their first TaterQue food truck in 2020; the truck was so successful they were able to open their first brick and mortar location in Pflugerville in 2023.

More details: Food offerings include appetizers, entree baskets, tater spuds and drinks. TaterQue also houses weekly events like family-friendly game night and karaoke with food and drink specials. The restaurant’s kid-friendly hours are available online. 

On the menu: Menu items include tater kegs, boudin egg rolls, three piece catfish with fries, wings and brisket and sausage sandwiches.

A new, craft cocktail lounge has opened in North Austin, where locals can indulge in a polished vibe without a trip downtown.

Foxtail features 58 seats, and bartenders specialize in craft cocktails, such as the Ristretto Martini, a spice-forward riff on an espresso martini, and the Kitsune, a signature old fashioned built with Suntory Toki Whisky, honey and bitters.

Judy’s Dogs opened in October and is carving out its niche at the Chestnut Grove Food Truck Court in Bastrop, with elevated takes on the classic hot dog.

Its menu includes a chili mac dog, a basic chili cheese dog and a lobster roll dog.

Baylor Scott & White to invest $200 million in Round Rock hospital

Baylor Scott & White Health, a Texas health care system, will invest $200 million in its Round Rock facility.

The details: BSWH has plans for projects at 13 Texas facilities, totaling up to $2.5 billion, according to Williamson county documents.

The $200 million dedicated for the Round Rock hospital could help finance or refinance construction and expansion of the physical facilities as well as health care equipment, according to county documents.

What happened: Williamson County commissioners approved the issuance of the bonds from the Tarrant County Cultural Education Facilities Finance Corp. at a meeting Nov. 18. Federal law required approval of the bonds, but Williamson County will not be held financially responsible for them.

The finance corporation is a nonprofit created in 2003 under the Texas Cultural Education Facilities Finance Corporation Act.

Also of note: BSWH also dedicated $55 million for the Pflugerville medical center in neighboring Travis County.
