Collin College to offer 2 new associate degree programs

🎓️ Collin College will soon be rolling out two new degree programs.

The two programs—associate of applied science in law enforcement, public administration and supervision and associate of applied science in cosmetology—were approved by the board of trustees. 

About the programs: Both programs include 15 semester credit hours of general education requirements as well as 45 semester credit hours of workforce education coursework. Students on each associate track are required by Texas law to complete 60 semester credit hours, college officials said.

Hoshi Ranch Japanese Barbecue & Local Market set to open in north McKinney

🥩 Steve Feldman, McKinney resident and owner of Hoshi Japanese Cafe in Plano, said he plans on launching a soft opening of Hoshi Ranch Japanese Barbecue & Local Market in November.

On the menu: The menu will feature a mixture of barbecue meat including traditional American options such as brisket and pulled pork as well as Japanese options like wagyu. Feldman said in addition to offering table-side interactive cooking experiences, the eatery will also roast gourmet coffee onsite and serve breakfast.

The context: The north McKinney restaurant will fill a space formerly occupied by The Shack by Chef Noah Hester in Cornerstone Farms’ restaurant space.

Stonebridge Diner serves breakfast, lunch options in McKinney

🍳 Stonebridge Diner is now open in McKinney, part-owner Bella Vranici said.

The specifics: Stonebridge Diner serves a variety of breakfast dishes including omelets, pancakes and crepes. Its menu also includes lunch dishes such as burgers, sandwiches and salads.

The context: The restaurant was opened by the owners behind Brothers Pizza, which closed in July after serving McKinney for more than 20 years.

Texas lawmakers to investigate deadly Central Texas floods with new committees

The Texas House and Senate are launching new legislative committees to “get to the bottom of exactly what occurred” during this summer’s deadly Central Texas floods, state leaders announced Oct. 13.

The details: The bipartisan panels, known as the House and Senate General Investigating Committees on the July 2025 Flooding Events, will meet jointly to conduct “a comprehensive and thorough review” of the floods, House Speaker Dustin Burrows and Lt. Gov. Dan Patrick said.

Lawmakers will be tasked with:

  • Identifying strategies to strengthen Texas’ disaster preparedness
  • Helping communities respond to future floods
  • Examining actions taken at summer camps in the flood zone

The background: During special legislative sessions this summer, lawmakers passed bills aimed at hardening summer camps against future disasters and improving local flood warning systems.

"While progress was made during the second special session to bolster Texans’ safety, the magnitude of this tragedy demands a comprehensive and thorough review," Burrows said in an Oct. 13 statement.
